Added some chopped raw cabage to use it up. Doubled recipe and had doubled bean amount. I also added raw, 3/4 brown rice for a thicker soup. Amazing soup. Served with a dollop of Greek yogurt, and some grated cheddar. So yummy! With crusty bread and some cheese, it was a lovely Christmas meal!

I absolutely loved this recipe! I needed something easy to make for dinner and I stumbled on your site via Google. My celery went bad so I had to omit but everything else made this soup a dish I’ll make again and again. Topped it with some vegan parmesan and had some homemade gluten free flatbread on the side to dip into the soup. I can’t wait to see what other recipes of yours I can try!
