I have to adapt a bit because I lack some ingredients. Can I use chia seeds instead of ground flax? I can’t get ground flax. I am using blanched chopped almonds in mine, I threw in onion some leek, then celery and parsley since I have it in the garden right now, and the carrots. I am not doing the topping this time. I am doing a roast dinner in practice for a big vegan dinner next Christmas. I do lots of different recipes and then choose the most tasty and user friendly. Last year the nut roast was too crumbly, I couldn’t slice it. We have some gluten free family, so your recipe is really looking good. I may make it with either dried cranberries in the mix, or a cranberry base for Christmas, then serve it upside down? Thank you for your ideas.

I mentioned how awesome the Glaze was, but did not mention how I made it, as the recipe gives many options.
This is how I made the most delicious loaf Glaze in the world:

2/3c Tomato Sauce
4tbl. Light Blue Agave
2tbl. Apple Cider Vinegar

Let sit in fridge

Basically I Doubled what the recipe suggested

When I was a carnivore meatloaf was my favorite meal. When I went vegetarian I found an awesome black bean meatloaf, which I love because black beans are my favorite.
What made this out of the world was the Glaze. I doubled all ingredients to make more. That Glaze was heaven and will start using that on my black bean meatloaf also.
Next? I’ve seen lentil loads as well as Nut loafs.
That Glaze though….geez

It’s from a farmers market in Seattle a number of years ago. You can leave the mushrooms out or add a bit more carrot or 1/2 cup grated and drained zucchini. Thanks!

This tastes better than meatloaf made with beef. The flavor and texture was nice. And it had tons of vegetables instead of tons of grease! I doubled this recipe and used 1 bag dried chickpeas I cooked the day before, It was close to 6 cups. I used two eggs instead of the flaxseed, and with the other ingredients doubled it fit nicely into a 9×13 Pampered Chef stoneware pan. I baked it for 60 minutes and it was perfect. I greased the pan instead of using parchment paper. It came out fine without sticking. I will definitely make this again!
