Hi, it does already have lentils in the recipe, so you can increase that amount to 1 cup and then either just omit the mushrooms or substitute a bit of walnut, zucchini and/or onion. I would probably just increase lentils and omit the mushrooms but up to you!

A couple of time & dish-saving shortcuts I’ll do next time: cook the rice & lentils in a bigger pot, then dump the onion and mushroom mixture into that, then if feeling extra-lazy, add the dressing ingredients on top and then mix.

Oh – it’s super easy to toast the pumpkin seeds by heating them in a dry pan, tossing occasionally.  When they’re fragrant and browned, they’re done.
